Honey Story

Honey is a sweet, viscous food substance produced by bees and some related insects. Bees produce honey from the sugary secretions of plants (floral nectar) or from secretions of other insects (such as honeydew). They do this by regurgitation, enzymatic activity, and water evaporation. Honey is stored in wax structures called honeycombs. The variety of honey produced by honey bees (the genus Apis) is the best-known, due to its worldwide commercial production and human consumption. Honey is collected from wild bee colonies, or from hives of domesticated bees, a practice known as beekeeping. It has antioxidant properties, as well as its antibacterial and anti fungal power. 


Generally, there are 2 following kinds of Honey.

Capped Honey

Normally, the honey is stored by honey bees in their beeswax honeycomb; in framed bee hives, the honey is stored on a wooden structure called a frame. The honey frames are typically harvested in the late summer, when they will be most filled with honey. On a completely filled frame, the cells will be capped over by the bees for storage; that is, each cell containing honey will be sealed with a capping made of beeswax. Generally Honey Bee creates a wind blow by using their wings to remove the water vapor from honey and sealed with beeswax. Any kind of laboratory process is not needed for this kind of honey. This kind of honey has high nutrition value.

Un Capped Honey

The cells are uncapped because the nectar hasn’t been dehydrated to the level needed for long-term storage. For whatever reason, the bees did not finish drying those cells. The moisture content of this kind of honey is excessively high. So this kind of honey may get fermented quickly. That’s why some kind of laboratory process are needed to remove the moisture content from the honey for long term uses. Processed honey can’t be treated a Raw honey and due to some laboratory process mechanism nutrition value gets decreased. Generally the honey collected from forest or natural honey comb are not fully capped and due to some wrong process of collecting those honey, needs to go through laboratory process and filtration mechanism.

Mono floral honey is a type of honey which has a distinctive flavor or other attribute due to its being predominantly from the nectar of one plant species. It is stored and labeled separately. While there may never be an absolute mono floral type, some honeys are relatively pure due to the prodigious nectar production of a particular species, such as citrus (orange blossom honey), or there may be little else in bloom at the time.

Poly floral honey types are produced by honey bees using nectar from many different flower sources. It is very common kind of honey.

Honeydew is a sugar-rich sticky liquid, secreted by aphids and some scale insects as they feed on plant sap. When their mouth part penetrates the phloem, the sugary, high-pressure liquid is forced out of the anus of the aphid. Honeydew is collected by certain species of birds, wasps, sting less bees and honey bees, which process it into a dark, strong honey (honeydew honey). This is highly prized in parts of Europe and Asia for its reputed medicinal value.
